The Undhofs call this Pet Nat 'Wolke fur Zwei', or Cloud for Two. Marc Hebrart, 'Mes Favorites' Vieilles Vignes, Champagne NV
This is the newest cuvee from Jean-Paul Hebrart, from 75% Pinot Noir and 25% Chardonnay. It is sort of a love letter to his favorite old vines in the village of Mareuil. With more weight and defined fruit texture coming from the high percentage of Pinot Noir, this wine has notes of golden apple, ginger, and brioche, and stays bright with fresh acidity.

Valdespino, 'Deliciosa' Manzanilla, Sanlucar de Barrameda NV (Sherry)
Valdespino is one of the oldest Sherry bodegas in existence. This fresh and floral Manzanilla is produced along the Southwest coast of Spain, where the ocean breeze lends salinity to the wine. Drink as an aperitif or pair with seafood and marcona almonds. We always like to have a bottle in our fridge, for afternoon and midnight snacks.

Etienne Calsac, 'Rose de Craie', Rose Champagne NV (ORG)
When he was only 26, Etienne Calsac took control of his grandfather’s 2.8 hectares of vineyards in the Cotes des Blancs, and has since been making some shockingly delish wines. This rose is mostly Chardonnay from Bisseuil and Avize, keeping it taught with lean acidity, with a touch of Pinot Noir from the Vallee de la Marne. It is fresh, with delicate aromas of red strawberry. Organic

Pierre Moncuit, 'Delos' Blanc de Blancs Brut, Champagne NV (Half Bottle)
Chardonnay grown in the famed Grand Cru village of Le Mesnil-sur-Oger. Despite being marked as ‘NV’, the Moncuit family only makes single vintage wines so that the characteristics of the individual growing season are better expressed. Here the 2016 vintage shows elegant aromas of pear, white flowers, lemon zest and the chalk that is so special to the Cotes des Blancs.
